Our friends Nick and Amy Ausman own Crystal Bay Lodge (www.crystalbaylodge.com) in Petersburg, AK, located on the inside passage of the Alaskan panhandle. Nick wanted to build a fishing lodge for outdoorsmen like himself, but it is so much more. You can also go whale watching, glacier hiking, sight seeing or just sit on the deck and enjoy the beautiful scenery right at their doorstep. Of course, if fishing is your thing, this is your place! Amy is a great cook and I know because I’ve partaken of some of her culinary creations and she personally prepares all the meals there at the lodge. She put together some of their guests’ favorites in a collection called “Your Menu at Crystal Bay Lodge”. Crab Cakes, Thai Chili Salmon and my favorite, Sweet & Sour Halibut are all in there and with Amy’s blessing, I’m going to share that recipe with you next week, so be on the lookout Monday morning. Another standout is the Captain’s Smoked Salmon Spread. Amy introduced us to this one last summer and all I can say is I hoarded that stuff like Gollum coveted his ‘Precious’ in “Lord of The Rings”. Delicious.
