Hummus and pita is just about the easiest and best little appetizer. You can grab them both at the grocery at the last minute, throw the hummus in a bowl, warm the pita in the oven & your party has started with very little effort. But if you take just another minute more and add a couple of ingredients, your pita has the potential for perfection. My friend Clara shared this little tip with me.
Cut the pita round into points and lay them on a cookie sheet. Pour some olive oil in a small ramekin and with a pastry or basting brush, brush each point with a little oil and sprinkle with a little salt. Bake for about 10 minutes at 350 degrees or until the top is slightly firm to the touch. Adding that little bit of oil and salt just gives some extra layers of flavor to the pita and makes it so good!!
And while we’re sprucing up the pita bread, here are some topping ideas for your store-bought hummus–drizzle a little olive oil on the top and add some fresh chopped parsley or cilantro, sprinkle some feta cheese on it or a few chopped olives, add a little minced marinated garlic or… a little bit of it all!
