Viva l’Italia means hooray for Italy! Love the country, love the wine and LOVE the food! If you’re entertaining this weekend, I wanted to offer up some ideas for a complete meal with an Italian spin. Starting with Bruschetta, with fresh tomatoes and basil. It’s simple to put together and everything can be prepared ahead of time. It is my favorite appetizer in the new cookbook! Love it. For the entree–a new spin on a classic. Red Gold Tomatoes’ Selita Reichart shared her recipe for Chicken Parmesan Lasagna with me in her kitchen in Indiana and it is so good! Much loved lasagna meets delicious chicken Parmesan. And no need to boil the lasagna noodles–they steam right in the pan in the oven. Here’s the recipe and video:
